- 57 oz Potato Pearls® Extra Rich Mashed Potatoes, prepared
- 4 cups Capers
- 40 each Artichoke hearts, drained and chopped
- 8 oz Butter
- 1 cup Caper brine
- 4 each Lemons, halved, grilled and juiced
- 1 cup Flat-leaf parsley, minced
- Prepare Potato Pearls® Extra Rich Mashed Potatoes according to the package directions and keep warm.
- In a large rondeau, sauté the capers and chopped artichokes in butter for 2 minutes.
- Stir in the caper brine, lemon juice and parsley. Turn off the heat and set aside.
- Fold in lemon mixture to the mashed. Serve.
