Mexicali Potato Bowl

Ingredients:

  • 1 package Potato Pearls® EXCEL® Original Butter Mashed Potatoes
  • 1/2 cup Sweet cherry peppers, finely chopped, stemmed and seeded
  • 1 Tbsp Garlic, crushed
  • 2 cups Sour cream
  • 1 gal Water, hot (170° – 190°F)
  • 3 lb Carnitas, cooked, shredded
  • 4 cup Tomato salsa

Instructions:

  1. Add Potato Pearls® EXCEL® Original Recipe Mashed Potatoes, sweet cherry peppers and garlic to a 4-inch deep, half-steamtable pan. Quickly add hot water, stir completely, making sure to hit all four corners. Set aside.
  2. Bowl Assembly: In an individual serving bowl place 1 cup Potato Pearls® Mashed Potatoes and top with 4-oz carnitas and 2-oz each tomato salsa and sour cream.
