2 pouches Santiago® Seasoned Vegetarian Black Beans, prepared
1 head White cabbage, shredded
1 head Purple cabbage, shredded
1 gal Salsa, prepared
100 each Corn taco shells, 6-inch, crisp, warmed
2 qt Salsa verde
Prepare Potato Pearls® Mashed Potatoes and Santiago® Black Beans according to package directions. Put aside.
Combine cabbage and salsa in a large bowl, set aside.
Fill each taco with ¼ cup of Potato Pearls® Smart Servings™ Mashed Potatoes, topped with 1 tablespoon of Santiago® Seasoned Vegetarian Black Beans, topped with ¼ cup cabbage mixture and 2 tablespoons of salsa verde. Serve immediately.
